I was doing so well, got my blogging mojo back, was feeling organised in life, and then bam, I got hit with the flu. I’m just not pulling myself out of it after being down for the count for the last week. Which is lucky as I’m getting better just in time for an adventure!

I’m off to Dublin Friday after work for the weekend with Sarah and I’m so excited. I’ve wanted to visit Ireland all my life, and plans have just never manifested. So now after living SO CLOSE to it for 7 years, I’m off. Historically Sarah and I together always ends in disaster (especially when alcohol is involved) and this is our first trip away together so hopefully we both make it back in one piece.

Some things that have been going on this month – Pancake day! Being from America we never celebrated pancake day so any excuse to eat pancakes is good with me. I had a bunch of friends over, assigned everyone a different topping to be, and made a boat load of pancakes. My favourite will always be bacon, blueberries and maple syrup, but I’m always open to more combos.

Adam went to Switzerland for a few days on a family trip, so missed out on pancakes and was gone for Valentines day, so you can imagine my surprise when I got a bouquet of huge white roses delivered to work last Wednesday. They are still going strong on our living room table.

Lucky I was at work as I got home that night and started my stint in bed. Man, if any of you have had this horrible flu going around this season, kudos for making it out the other side. It knocked me right out. I’ve not been that sick since I was in school I’m sure. I alternated between our bed and the sofa, and the cats happily followed me about laying with me. Being sick is better with cuddly animals about for sure.

Brunch at @themainemayfair is an AFFAIR. It’s a Brunch at @themainemayfair is an AFFAIR. It’s a beautiful venue, the staff are friendly and the food was divine. I will dream of the garlic mashed potatoes and truffle mac and cheese until I have them again. Everything was delicious except the sticky toffee pudding wasn’t anything to write home about, so grab the creme brûlée instead. Go with a friend who will share so you can try more dishes!

This year was one for the books, after starting th This year was one for the books, after starting the adoption process in lockdown 2020, we brought home a 6 year old the end of July and he’s turned our lives upside down and kept us laughing ever since. So this Christmas season was a pretty special one but also draining as there’s so many emotions swirling round this time of year that no one talks about. 

Here’s to more adventures in 2023 and hopefully some more calm moments!
