Cupcakes are perfect for outdoor parties; no plates, no forks, no cutting of pieces, just perfectly portioned goodness. I decided to make some chocolate cupcakes for our 4th of July celebrations, and I think I’ve finally found the perfect chocolate cupcake recipe and the frosting, light fluffy buttercream that isn’t sickly sweet. Sold!
My mom’s friend Debbie makes the BEST broccoli slaw ever. I had never even had it, or heard of it, until one of the many camping trips we went on. I couldn’t remember what she put into hers, so I kind of winged it and just put what I could remember were my favorite parts – the broccoli, red onion, and of course BACON.
As much as I would love to claim this recipe as my own, it’s not. This is Nigella Lawson’s Perfect every time lemon drizzle cake. I’ll tell ya, it turned out pretty darn good.
Last Thursday Adam’s mom invited us to go to a tepanyaki restaurant in Bawtry, which is about half an hour from where we live. Now I’ve been to tepanyaki places before and while they are always fun and entertaining, the food is always a bit lackluster. Jinja Tree however exceeded alllll of my expectations and was absolutely delicious! If you’ve never been to or heard of a tepanyaki restaurant, if you choose their set tepanyaki menu you get to watch a chef make your food in front of you on a giant hotplate. The chefs generally toss/juggle their spatulas, are quick handed in stirring around the rice and meats being cooked, do tricks with throwing eggs around, and often toss cooked egg pieces into the air for you to catch in your mouth (mine splattered on my cheek but Adam got his in!). I’ve been to some where they make an onion volcano and was slightly disappointed I didn’t get to see it at the Ginja Tree. We started off our meal with miso soup (pictured above) which looks simple but is delicious!
I like to bake, but not gonna lie, it’s always a little hit or miss and has become a long standing joke between Adam and I. I’m NOTORIOUS for not following recipes and trying to substitute ingredients. I think it stems from the creative in me, always looking to change things. This sometimes miraculously works out in my favour – thusly these delicious cookies were born.
