I made this for our BBQ this weekend as it is the perfect (I think anyway) accompaniment to BBQ food, hotdogs, burgers and the like. I made a smallish bowl as wasn’t sure if people would like it, but it went down a treat, and I finished it off. If you are making this for a crowd, you might want to double the recipe.
My mom’s friend Debbie makes the BEST broccoli slaw ever. I had never even had it, or heard of it, until one of the many camping trips we went on. I couldn’t remember what she put into hers, so I kind of winged it and just put what I could remember were my favorite parts – the broccoli, red onion, and of course BACON.
:: Ingredients ::
Broccoli – one big head (or a large back of pre-shredded/chopped broccoli)
One small red onion
6 strips bacon (or however much you want to put in!)
2-3 tablespoons of mayonnaise
2-3 tablespoons of cider vinegar
3 tsp dijon mustard
1 tsp garlic paste/pressed garlic
pepper to taste (you might wanna skip the salt, the bacon is salty enough!)
:: Method ::
Slice up the broccoli into strips, or small chunks so it’s shredded, dice up red onion and bacon and stir everything together with mayo, cider vinegar, mustard, and garlic. If you want it to be saucier add more mayo and vinegar, I think I used 3tbs of mayo and 2tbs cider vinegar. Do whatever tastes right to you. That’s it! Flavor-full easy salad to go with your BBQ.
